Contrary to popular belief there are a lot of options and different meal ideas that you can create on a raw lifestyle. Even though I personally do not mind salads and could eat one every day, I know that variety always makes life better. One of my favorite go to quick raw vegan meals are these super simple Thai lettuce boats. I make them whenever I need something different or if I need some Asian flavor in my life. The cucumber noodles in this recipe can be made by using a spiralizer. Popular brands include spirooli or veggeti. If you don't have access to this tool you can use a vegetable peeler and peel very thin strips from a few cucumbers.
Although I do have a few sample veggies included in the recipe, you can customize these by adding whatever veggies you like inside or even adding marinated mushrooms or cauliflower rice inside your boats. The thickness of the sauce can also be adjusted by reducing or adding more sun-dried tomatoes to your liking. These make great appetizers or you can make a lot of these for a whole meal.
Ingredients
For the boats:
1 large head of green leaf lettuce or romaine
1 Avocado sliced
Cucumber noodles
1 bell pepper (diced)
2 cups red cabbage (shredded)
For the Sweet Thai Chili Dipping Sauce:
½ cup red bell pepper (chopped)
1/3 cup date paste (dates and water blended)
8 sun-dried tomatoes (no sulfites or oil added)
1 garlic clove
1 inch fresh ginger
1 tsp chilli flakes
Juice of two lemons
1/3 cup water
1.) Assemble your boats
2.) Gently remove 5-6 leaves from your head of lettuce (these will be your boats)
3.) Fill your boats with the shredded cabbage, the cucumber noodles, the diced bell peppers, and one or two slices of avocado
4.) Set all of your beautiful boats aside while you make your dipping sauce
5.) To make the sauce place all of the sauce ingredients into a food processor and process until well mixed but still a little chunky
6.) Pour sauce onto each boat and enjoy or roll your boats into wrap and dip into the sauce
