Raw Vegan Sweet Potato Pie
Crust:
2 cups walnuts
2 cups dates
Pinch of salt (optional)
Pie filling:
6 cups sweet potato peeled and cubed
1 whole ripe avocado
2 cups soft medjool dates
3 teaspoon cinnamon
2 tsp pumpkin pie spice
To make the crust:
1.) Pulse walnuts and salt in food processor until crumbly.
2.) Add dates to the food processor and blend until sticky
3.) Press that mixture into a 9 inch pie pan
4.) Set in the fridge while you make the filling
To make the filling:
1.) Process raw sweet potato in food processor until soft
2.) Add avocado, dates, and spices
3.) Blend in food processor again
4.) Take that mixture and add to vita-mix or high speed blender
5.) Blend until very very smooth ( only attempt with vitamix)
Assembly
1.) Pour smooth filling into pie crust
2.) Refrigerate for 6-8 hours
3.) Slice and enjoy
